Polichintas Recipe (Crepes)

Crepe Suzzettes (palichintas – not sure of spelling)
Put in blender:
4 eggs
1 cup milk
2 teaspoons sugar
1 cup flour
1/2 cup melted butter (that’s a quarter pound) (you can use margarine)
Using a fry pan, put some oil in pan (just a little – even works good if you dip a paper towel in the oil and spread it over the pan). Teflon pans work best….Make sure the oil is hot before you put any of the above mixture in the pan. I would guesstimate that you put approximately 1/4 cup of the mixture in the center of the pan. Pick up pan and let mixture flow around the pan. When the edges get a little brown, place of flat long metal spatula under the center at about the middle, lift and turn. You only need to have it on the second side for a couple of seconds. Then continue with the rest of the mixture. You can adjust the amount of the mixture to get the size you want, big or small.

I don’t know if you are wanting to make the sausage crepes, but, if so, you simply fry up a pound of loose sausage. Take off the grease after the sausage is browned. Turn off stove and add salt, pepper and an eight ounce package of cream cheese. Then place sausage across the center of the crepe and roll up. These are all cooked now, but when I make them for company, I put the stuffed crepes into a buttered lasagna pan and bake at about 350 degrees for about twenty minutes. Edges of crepes get crunchy….
If you are making the crepes plain, you can just sprinkle sugar or jelly. Also, you can stuff them with just about anything you want…..
